The Mill & Brewhouse is now ServSafe Certified. The National Restaurant Association Educational Foundation developed ServSafe® to educate food service managers about such topics as microbial contamination, food allergens, and food-borne illness; personal hygiene; preventing cross-contamination; monitoring time and temperature; flow of food through the operation; pest management; cleaning and sanitizing; food safety regulation and standards and employee training.
In addition to the course work, participants must pass an exam before receiving their certification.
Food service managers are currently required to complete food safety training by the Michigan Department of Agriculture, and by July 1, 2009, every establishment will be required to have at least one manager who has received certified food protection education accredited by the American National Standards Institute (ANSI).

Our State Rep. Kevin Daley to be at Mill

State Rep. Kevin Daley is holding district office hours in order to give residents a convenient opportunity to meet with him locally.
Daley will be available Monday, May 11 from noon until 2 p.m. at The Mill and BrewHouse Café in Almont, located at 622 S. Main Street.
No appointment is necessary.  Residents unable to meet during the scheduled office hours may contact Daley at his Lansing office by calling 1-517-373-1800 or by e-mailing kevindaley@house.mi.gov.

3–Think about which three independently owned businesses you would miss the most if they

were gone. Stop in and say hello. Pick up a little something that will make you or someone
you know smile. Your contribution is what keeps those businesses around.

50–If just half of the employed U.S. population spent $50 each month at independently owned

businesses, their purchases would generate more than $42.6 billion in revenue. Imagine the
positive impact if three quarters of the employed population did that.
For every $100 spent at an independently owned store, $68 returns to the community
through taxes, payroll, and other expenditures. If you spend that in a national chain, only
$43 stays local. Spend it online and nothing stays local.

The number of people it takes to start a trend? One….you.

Wide Open Spaces

ReLiteration, the new and used bookstore formerly located on the second floor, has outgrown the space and she is now in business right next door!  Now she has more space to grow and so do we!  Our upstairs has wonderful seating and is cozy on those winter days.  There is a lot of space to spread out; perfect for crafters to come and work on budding projects or group meetings.  If you have a small event coming up, perhaps a baby shower or staff party, let us know!  We are now renting the upstairs for small events and if you wish, Deb will cater the event.  She does an amazing job and creates an elegant and delicious menu based upon your needs.  It’s time to relax, let us do the work!

Try On Something New

Tired of the same trendy clothes that everyone has?  Begin this spring in a retro fashion at  La Ruche!  La Ruche is my quaint vintage boutique located on the first floor of The Mill.  I scour estate sales, auctions, and other vintage shops for unique and quality pieces.  I immensely enjoy sifting through vintage clothes and combing the area, in order to bring you one of a kind outfits that you will feel confident in.  I have always loved wearing vintage clothes because they are timeless and it’s a guarantee that you won’t see anyone else wearing the same thing!  I’m always adding new clothes, jewelery, shoes and purses, so stop by and check it out!

Part 2 Coffee, a Healthy Drink

Coffee is the number one source of antioxidants in the American diet, according to a 2005 University of Scranton study, exceeding wine, chocolate, tea, fruits and vegetables. Antioxidants may help prevent diseases such as heart disease and cancer.Research from 2006 involving more than 27,000 women indicates that one to three cups of coffee daily can lower the risk of cardiovascular disease. And a 2005 study of more than 90,000 people in Japan found that daily coffee drinkers had half the rate of liver cancer when compared with less frequent consumers.

Surprisingly, coffee contains a high level of soluble dietary fiber—more than other beverages like wine or orange juice. That may explain why a 2002 study of nearly 81,000 women found that those who drank four or more cups a day had about a 25 percent lower risk of gallstones than nondrinkers.

Something in coffee seems to help insulin do its job: Women who drank three to four cups a day had a 29 percent lower risk of diabetes, according to a study from Finland.

There’s a grab bag of other preventive benefits, too: protection against chronic liver disease—such as alcohol-related cirrhosis—in people who are at high risk, for example. And food chemists have discovered a substance in coffee that may help ward off colon cancer.

You might even want to make a cup of joe your preworkout beverage: A small study published in March found that a dose of caffeine roughly equal to that in two cups of coffee reduced postexercise muscle soreness by nearly half. Caffeine blocks adenosine, the theory goes, which is a chemical linked to inflammation.

Don’t think you have to kick your coffee habit. A host of scientific evidence suggests that one of the most widely consumed—and maligned—beverages in the world is good for you. Really.

Coffee has gotten a bad rap in the past, blamed for ills like heart disease, cancer, and osteoporosis. But many of the findings were based on flawed research. “The earliest studies were done when we weren’t aware of certain lifestyle associations with coffee consumption, like smoking,” says Peter Martin, MD, professor of psychiatry and pharmacology at Vanderbilt University. Since then, says Martin, science has shown that “coffee is an extremely healthful drink.” A panel of nutrition experts at the Federation of American Societies for Experimental Biology meeting in April addressed the recent advances in knowledge that validate not only coffee’s safety but also its health perks.

Chocolate Caliente with a hint of vanilla bean and cinnamon

Or how about a Parisian Warm Chocolate made with  heavy cream, oh la la!

Home for the Holidays

With Christmas and New Years just around the corner it’s time to begin wrapping gifts, decorating the tree, and baking delicious treats to share with your family.  The holidays can be hectic and when there just isn’t enough time, simply give us a call and we can prepare a scrumptious assortment of goodies for your guests.  Dream of our freshly baked cranberry scones on Christmas morning?  We will prepare any of our baked goods and with simple baking instructions you can have them ready exactly when you need them.

If you’re feeling ambitious and want to try something new, here’s our recipe for Chocolate Bouchons:

Bouchons are little cakes, with a dense texture somewhat firmer than a brownie, are packed with cocoa flavor and studded with chocolate chips.

What You’ll Need:

4 LARGE EGGS

3/4 CUP PLUS 2 TABLESPOONS SUGAR

3/4 CUP PLUS 1 TABLESPOON UNSALTED BUTTER, SOFTENED

1/2 CUP PLUS 1 TABLESPOON UNSWEETENED COCOA POWDER

1 1/3 CUPS ALL-PURPOSE FLOUR

2/3 CUP SEMISWEET CHOCOLATE CHIPS

1/3 CUP CONFECTIONER’S SUGAR

Directions:

Preheat oven to 375°F.  Butter twelve 2-inch timbale molds or a muffin tin with twelve 2 3/4 inch cups.  In a large mixing bowl, whisk the eggs and sugar together until blended.  Add the butter and cocoa and whisk until well blended and smooth.  Add the flour and whisk until nearly blended.  Stir in the chocolate chips just until the mixture is blended.

Spoon the batter into the molds or cups, filling them about 3/4 full.  Bake 15-18 minutes (timing can vary based on the depth of the molds), or until the cakes have browned and set and a toothpick inserted in the center comes out somewhat moist.  cool the pan briefly on a wire rack; then gently unmold and cool the cakes completely.  Garnish with confectioner’s sugar.

In 1990, Debra & Arthur Schumacher purchased the building and as they say, the rest is history. Since opening her store in 1989, Debra has sold antiques as her main operation and in 2004 branched out adding The BrewHouse Cafe & Espresso Bar to the building’s history.
